At one of my first design jobs I became great friends with a coworker named Lucky. As our friendship grew he would always tell me that his true passion and goal would be to open a restaurant or food truck and serve puccias. A puccia is a "pouch" or sandwich. When ordered fresh dough is immediately thrown in a wood fired brick oven and baked right before the sandwiches are made. I was super excited for him when he made his dream come true and bought a trailer to start his business. I was more than happy to help him establish a unique brand that could be extended to all parts of his business. He has been a huge success and ws even able to open a brick and mortar restaurant, though he still enjoys working in the truck from time to time.
